What should I eat?

I have this bloating issue with everything I eat. So what should I eat? Or what should I not eat? A couple of weeks ago I did just that. Not eat. I didn't eat for 2 straight days, so sick of the bloating and scared of it too. I didn't get bloated or swollen for those 2 days at all, it was amazing, but I can't not eat forever. I love food plus I have to survive. So what should I eat?

My diet is vegan except for organic range free grain fed hormone free eggs. I gave up dairy 14 months ago and I gave up meat 16 years ago. I have never had beef or pork my whole life or milk either since my mother found out I'm allergic to it as a baby. I can't do caffeine as I have a seizure like response to it so I don't drink soda or coffee either. I haven't had high fructose corn syrup in 18 years or any artificial sweeteners. I haven't touched partially or wholely hydrogenated oils of any kind in forever. I feel like my diet is so clean, what could possibly be going wrong? After I gave up cheese, yogurt, and butter, I felt so good and my skin was clearing up from all the acne problems I had been having. I've always been energetic but I think I gained even more after dropping the dairy (inspired by Skinny Bitch and Forks Over Knives). So what could possibly be causing this problem??

I stopped soy consumption for a while since I heard that we humans do not digest it properly and it increases estrogen production inhibiting testosterone as well. I was inspired since I wanted to gain more muscle mass in my workouts to come but thought I might consume it here and there. In moderation, I figured would be ok. Then there was a work function that had some fake soy meats for the vegetarians and vegans and I endulged. Who would pass up on free yummy fake meat? I mean the stuff tastes good. Oh boy did I get sick. So I avoided soy again, but then I wanted to make sure so after a couple of weeks, I tried it again. Sick again! Well ok that's another thing to scratch off the diet. What else??

I had been hearing about people having gluten allergies and that eliminating gluten can help your skin, clearing up acne. It was the swelling of your intestines that backed your system up that caused the acne. Or so I heard from people and Google. I wasn't having any swelling or bloating when I ate wheat or gluten so I hadn't stopped it but making my skin that much clearer inspired me to stop and go gluten free. So I experimented. I heard that in order to find out if you have an allergy to gluten or if your body has a hard time digesting it therefore causing acne, you must stop consuming gluten for 2-3 months then introduce it back in. If you swell up or bloat, then you are allergic or have Celiac Disease (further side affects beyond allergy). I reduced my wheat/gluten intake significantly but never cut it completely. I already felt like I was giving up soooo much as it was. But then my friend said, if you don't stop it completely, then you will never really know. Okay okay. So I went without for a couple of months and ate wheat again and I didn't have a reaction. I must be good right? So I started eating it again but still in massive moderation since I felt good and didn't want to weigh my body down. So I was dairy free, meat free, caffeine free, and 95% gluten free for months. All of a sudden this major bloating/swelling problem came up. What the heck could it be?!?
